It was a cute and quaint shop with lots of sweets but also a wonderful selection of sandwiches and soups. If you’re ever in South Alabama, make sure and stop by!

Crock Pot Lasagna

Ingredients:

1 pound ground beef, browned and drained
1 tablespoon Italian seasoning
8 Lasagna noodles, uncooked and broken into thirds
1 (28 ounce) jar of spaghetti sauce
⅓ cup water
1 can diced tomatoes
1 (15 ounce) container of ricotta cheese
2 cups shredded mozzarella cheese (8 ounces)
Garnish with Parmesan cheese

Directions:

1. Combine ground beef and Italian seasoning.

2. Arrange half of the lasagna noodles in a greased 5 quart slow cooker.

3. Spread half of the ground beef mixture of the noodles. Top with half of each remaining ingredient except Parmesan cheese.

4. Repeat layering process.

5. Cover and cook on high for 3 hours or on low for 5 hours.

6. Garnish with Parmesan cheese.

While you’ll read below that the instructions tell you to cover with foil, I did not. I will next time. Although it was delicious as it was, the buns were a bit crunchier than I would have liked and not as ooey gooey as I think it would have been had I remembered to cook it covered. Regardless it was delicious and something I’ll be making a lot in the future. Because it was just Mom and I eating I only made 6 and not the 8 but you could make as many or as few as you need.

Recipe:
Hot Dog Buns
Hot Dogs
Condiments (mayonnaise, ketchup, mustard, ranch, relish, etc)
Hot Dog Chili
Cheese, shredded
Onions, chopped

Spread condiments inside the buns, the more the merrier if you’re of the ooey, gooey carnival food; less if you like your bun to stay intact and none if you live with picky eaters. I did half with ketchup and mustard and half with only mayo (Mom’s condiment of choice)

Add one hot dog to each bun. (I buy hot dogs on sale and freeze them so these were frozen when I started)

If desired, top with chili, cheese, chopped onions.

Cover baking dish with foil. Bake at 350 degrees for 50 minutes.

I’m only on season 3 and it has been a week. Enjoying the ride down memory lane again though!

I know the moment that when I hear my neighbor Phyllis call my name that I’m about to be blessed. Blessed with conversation, blessed with caring and loving questions or information, blessed with a delicious meal or blessed with the wonderful heart that is Phyllis. Love her and love my neighborhood mostly because of her. When I travel she keeps a watchful eye on my house & my sister who keeps the fur babies, when I’m home she keeps a watchful eye on me.

Yep, I’m blessed.

That has been one of my favorite lyrics/quotes since I first heard the song (many years ago lol). Every moment of every day you’re making a choice of some kind, it isn’t just important to OWN the choices made but to OWN & take responsibility for the results of the choices, not just for you but those that your choices effect.

Don’t forget everyone around you has choices too that they have to own and so on and so forth and someday your choices now may leave you without as many choices in the future.
